This is Fred in WV.  Thank you Jan, I had a rest day that day.  I received 7 cards.  So it was a quite day but for me that is a great day because I have been so busy.  Today I see my family doctor for a pre-op physical for my pacemaker replacement tomorrow.

I have been wondering where you have been the last few days becasue I have not seen any posts.  I hope you have not been sick.

This is Fred in WV.  Thank you Joyful for the birthday wish.  On the reading more of my stories, I do not think I will ever run out of stories about me, sarcoidosis, doctors and hospitals.  Back in the mid 1990s a cardiologists told me I shoud get a professional writer and tell him my story so they could write a book about me and my life with all of this.  But the best part of my story is the Marshall Protocol and all it has done for me.  My doctor laughted when I told him today about me putting the crushed Benicar made into a paste for my bad thumb.

Remember, we are all in this together and I am pulling for us.

I did go through a rough patch recently, as we all do now and then, and I've just been trying to catch up with neglected things and haven't been posting as much.

Here's a low-carb replacement for birthday cake I've just thought of:
Birthday Nachos!

Start with corn chips - the best quality ones if you can get 'em, made with plain corn oil, not sunflower (vit D) or heaven forbid cottonseed oil (poison!).
Spread them on a baking tray and sprinkle just enough grated hard cheddar cheese and a dusting of parmesan if you like the taste. Place in a moderate oven for a few minutes, (keep an eye on them) just to get the cheese to melt and get lightly brown on top. Remove from oven and transfer to a pretty round serving platter.  If it has a center dish, good, otherwise, push the chips to the outside, making a hole for your dips in the center. (In my book you never pour horrid, liquified cheese-flavored goop over the chips - it makes them soggy and the chances of that stuff being OK for your MP diet is zilch.)

Make a central mound of refried beans. (cooled)
Surround with a ring of tasty salsa.
Use guacamole as "frosting".

Add candles (stick them in the refried beans) and sing! Then everybody dip in.

I make my dips from scratch: it's safer...

REFRIED BEANS:
1 small onion, diced.
2 cloves garlic, diced
2 Tbsp olive oil
1 tsp "Mexican chilli powder" mix (or your own spices to taste)
1/2 tsp ground cumin
Saute above ingredients in a heavy (cast iron is best) skillet. When onions are just starting to brown, add:
1 large tin (or 2 small) red kidney beans - rinsed & drained
Take a heavy-duty potato-masher or a strong fork and mash the beans in the pan. No need to be too perfect about it... motly mashed is fine; I like chunky beans.
Now add water (I use the empty tin to measure the right amount) and stir... then leave it to simmer (about 10 - 15 min) until it begins to dry out and a crust starts to form on the bottom of the pan. (Test frequently with a the fork.)
When there is a brown crust (NOT BURNT!) on the bottom of the pan, add another cup of water and stir it in, scraping all that nice tasty crust back into the mixture.  Adjust the amount of water to the consistency you like for dipping and remove to a container to cool.

GUACAMOLE
For each ripe avocado (depends on how many you are feeding) add the following:
First, scoop avo into a bowl.
1 Tablespoon plain, low-fat yoghurt. (optional; it's nice but not entirely necessary if you can't get MP-safe dairy products) NO sugar. Not vanilla. Plain.
1 Tbsp lemon or lime juice
small amount of garlic - a very small clove or 1/2 a larger one.  Crushed
Tbsp finely minced onion
salt & pepper to taste
Now, mash the guacamole ingredients with a fork or potato masher. NEVER, EVER USE A BLENDER to make guacamole. (That whips air into it, which makes it go grey/brown very fast!)

FRESH HOT SALSA
2 med Tomatoes, chopped fine (one cup or more)
1/2 C minced mild onion (Red onion is nice and pretty)
1 ripe, red chilli (one birdseye / one jalapeno / 1 large, ripe serrano) your choice of varieties, chopped very finely (and carefully - gloves recommended)
1/2 C green pepper, minced (you can use 2 or 3 different colours - it's pretty that way!)
1/4 cup chopped leafy herbs of your choice. I like fresh cilantro. Also good are parsley, chives, green onions, oregano; any combo you like.
Lemon juice (about 1 Tbsp) and Green Tabasco sauce (about 1 Tbsp) to taste.
Just put it all together, mix and let stand an hour or more for flavours to mix.

DISCLAIMER: The recipes are tried & true but I've never tried serving it as a birthday cake yet... but am planning to for my birthday soon. What could go wrong?  ;):dude::P

I started Beni, I think it was on our wedding anniversary (My D.H. will love that birthday cake, thank you Claudia) , but there was so much fear and denial happening at the time, I am not too sure of the actual 1 year anniversary date.

when I was very, very young I used to go to a psychotherapy group where one of the others dreamed about trying to keep his balance walking across a causeway with crocodiles in the swamp on each side.  Sometime in this last decade I realised what a wonderfully sophisticated visual pun.  How gifted that man must be, hope he is doing OK now and did not join the ranks of the suicided, which happened to both the psychiatrists on the case :(
